Every Friday for the last several weeks we have been hopping over to Loreto, BCS to get fresh produce. We have been lucky to also get freshly butchered goat π (cabrita), beef tenderloin, and rabbit π(conejo). Thanks Sailing Totem!!
Este conejo is going to marinate for the day and all night and then I am going to slow cook it in olive oil in my solar oven.
It came with its heart, lungs, trachea, and liver so the kids and I marveled over the organs as a mini biology lesson. Ok, maybe I marveled more than the kids π.
